Dahi ki kadhi (Indian)
Dahi ki kadhi
Ingredients
1 cup Yogurt
2 tbp Gram flour (Besan)
1 tsp chopped green chili’s
1 tbp chopped coriander
2-3 curry leaves
½ tsp of ginger
4 cups water
Salt to taste
4 tbp cooking oil
2-3 okra or Bhindi
Spices
1 tsp fenugreek seeds
½ tsp cumin seeds
½ tsp mustard seeds
Preparation
· Julian the Okra
· Chop the ginger and coriander leaves.
Method
Add a few table spoons of water to gram flour to make a smooth paste.
In a big bowl whisk this paste and yogurt together until the yogurt is not lumpy. Add 4 cups of water and whisk until smooth.
In a round bottom pan add 3 table spoons of oil and fry the okra until crisp. Take the okra out and set it aside.
In the same pot add cumin, mustard seeds, green chilies, and curry leaves. When the mustard seeds start to crackle add the yogurt mixture and bring it to a boil. Add fenugreek seeds, ginger and salt to taste. Let it boil until the Kadhi reduces to half its volume. Garnish with chopped coriander and fried okra. Serve hot with Pulao or Rice. 
 
P.S This Kadhi is loose and runny. It’s traditionally served with Khichdi.
