Palak Paneer (Indian)
Palak Paneer

1 bunch of fresh spinach
1 cup diced tomato
½ cup diced onion
1 tbp minced garlic
1 tsp chopped ginger
4 tbp cooking oil
1 cup paneer cubes
1 tbp chopped chili
1 tbp lemon juice
1 tbp coriander leaves
Salt to taste
½ tsp turmeric powder
1 tsp coriander powder
½ tsp cumin seeds
1 tsp garam masala powder (optional)
· Dice paneer (cottage cheese) into bite size pieces and marinate it with salt, lemon juice, turmeric powder, coriander powder and set aside
· Wash and blanch the spinach in hot water and shock it in ice cubes · Mince the garlic
· Roughly chop ginger, green chilies, onion and coriander leaves
In a round bottom pan heat four tablespoon of cooking oil over medium to low heat. Add cumin seeds and cook onions, tomatoes, and sauté until onions are transparent and tomatoes are watery. Cool the mixture and in a blender blend together the mixture along with spinach to form a paste. Return the mixture back to the flame and add paneer pieces. Give the mixture a good stir and add a few tablespoons of water (if needed). Cook covered for 15 minutes or until oil separates over a low simmer, add garam masala.
serve hot with rotis.
