Broiled Fillet of flounder

Ingredients

2-3 fillets of flounder 6 ounces each

2 tbp of butter

2 tbp of olive oil
1 tablespoon of Sherry

Finely ground black pepper

2 lemon slices, sliced ¼ inch thick

1 tbp of bread crumbs
Sea salt

Preparation

·         Preheat the Broiler

·         Season the fish with salt and pepper and set aside for 10 min.

·         Combine the butter,sherry and olive oil in a shallow bowl.

Method

Slide the fillets through the butter,oil,sherry mixture. Fold each fish fillets into three folds.

Place them in the backing dish together, overlapping on the thinner side of the flesh.

Sprinkle the fish with bread crumbs. Place the lemon slices over the breadcrumbs and Broil the fish for 8 to 10 min.

Serve hot with a side of steamed vegetables and mashed potatoes.
