Chicken in green sauce (Indian)
Chicken in coriander sauce
1 pound of chicken with bones
½ tsp of turmeric powder
½ tsp coriander powder
1 tsp of lemon Juice
½ tsp of red chili powder
4 tbp cooking oil
Salt to taste.
Green Paste
1 bunch of coriander leaves
1/2 Bunch of mint leaves.
4-5 green chilies
3-4 peppercorns
1 tbp of ginger
3 tbp of garlic
1 tsp cumin seeds
to taste
½ cup of water
 
Preparation
· Grind all the ingredients into a paste.
· Cut the chicken pieces into 2 inch cubes and marinate for 30 min with salt, turmeric powder, chili powder, and coriander powder and lemon juice.
 
Method
In a round bottom pan over low to medium heat, add 4 tbp of oil and green paste fry for a couple minutes until oil separates. Add 1 cups of water and bring it to a boil. Add the chicken pieces to the pan and lower the flame to a slow simmer. Cook the chicken covered for 20 minutes or until done.
serve hot with rotis.
 
Alternatives
Coriander leaves can be substituted by a cup of blanched Spinach to make the Chicken in Spinach sauce.
