Ingredients
1 cup of Mutton with gravy
4 tsp cooking oil
1 onion
1 tomato
1 tsp ginger
1 tbp Garlic
1 potato
2 cups Basmati rice
1 tsp green chili
Salt to taste.
Spices
1 Bay leaf
1 tsp cumin seeds
2 cloves
1 green cardamom
1 inch cinnamon stick
1 tsp Red chili powder
1 tsp coriander powder.
1 tsp Dry Mango powder
1 tsp Garam Powder.
Preparation
· Julian the onion, season it with salt.
· Julian The Potato season it with salt.
· Dice the tomato
· Mince the garlic
· Chop the ginger and chilli's
· Wash and soak the rice in water for half hour.
In a frying pan deep fry the onions until dark brown and crisp and set aside. In the same frying pan fry the potatoes like French fries.
In a round bottom pan add 4 tbp of oil. Over a medium flame, add bay leaf, cinnamon stick, cloves, green cardamom. Add tomato and cook until the juces evaporates. Add the drained rice and fry it in for a few seconds stirring constantly until water evaporates. This helps the rice from forming lumps when it’s done. Add the cup of mutton with sauce and give it a good stir. Add chili powder, coriander powder, Mango powder and salt, 1 1/2 cup of water to cook the rice. Lower the flame to a simmer, cook covered for another 5 to 10 min. Make sure rice has some moisture left so the rice does not stick or burn in the bottom. When the rice is done shut the flame and fluff the rice with a fork.
Sprinkle garam masala powder, cumin seeds and fresh coriander and splash a couple of spoons of oil. Mix well. Garnish it with the crisp onion and potato's and enjoy!
